Introduction

This is the perfect summer side dish or Mexican meal starter. It's cool, a tinge spicy, and DELICIOUS--especially over a bed of fresh baby spinach spinach. Ingredients

    1/2 cup yellow corn, rinsed and drained
    1/2 cup black beans, no salt added, rinsed and drained
    1/2 cup (cherry) tomatos, chopped
    1 tbsp fresh cilantro, torn into little pieces
    2 tsp lime juice
    1/4 tsp cumin
    pinch red pepper flakes

Directions

Combine all ingredients in a bowl, mix, and refrigerate for at least 1/2 an hour to let flavors intensify.

Serving Size: makes 3 1/2 cup servings (1 1/2 cups total)
