Ingredients

    1 light muli-grain english muffin
    1/4 cup liquid egg whites
    1/4 tsp jarred minced garlic
    1/4 cup fresh baby spinach
    1 slice fat-free swiss cheese (or 1 wedge laughing cow light)
    1 tsp dijon mustard

Directions

Lightly toast english muffin, and spread with Dijon mustard.
Spray a skillet with cooking spray and saute garlic for 30 seconds. Add chopped spinach cook until wilted. Add beaten egg whites and cook until done. Put cheese slice on one half of english muffin, top with cooked egg, squirt on mustard, and top with other half of muffin. Dig in!

Serving Size: makes 1 sandwich
