Introduction

I am trying to be creative during the blended phase following gastric sleeve surgery. I love egg salad, but never make it for myself. I'm thinking this will be a tasty high-protein meal that won't look bad when blended smooth. Ingredients

    1 Hardboiled egg
    1 Tbsp 0% fat Fage Green yogurt
    1 tsp Brown mustard
    1 tsp Brussels sprouts relish (or any relish)

Directions

Chop egg. Add remaining ingredients; mix well. Place mixture into blender and pulse until smooth (no lumps allowed)

Serving Size: makes 1 serving
