Ingredients

    roasted skinless chicken breast, about 3 oz
    1 cup white rice, cooked
    .5 cup chopped onion
    .5 cup chopped celery
    1 clove garlic, chopped
    1-2 Tbl. extra light olive oil
    1 tsp. ground ginger
    1 egg, beaten
    chopped lettuce
    soy sauce
    salt and pepper to taste

Tips

use a fairly big skillet--med to med hi temp. I usually double or triple recipe and use boiled skinless chicken breasts--1 and 1/2 makes enough for 6 servings.


Directions

saute onion and celery in oil til translucent, add garlic and saute a little more, add chicken cut into pieces, ginger, and soy sauce and stir and heat; add rice and mix w/meat and veggies until thoroughly heated through. make holes in mixture and pour in egg, scramble in pan, then mix into rice mixture. Add lettuce and stir til slightly wilted. Serve. Great with pineapple salad.
