Introduction

Number of Servings: 4

Ingredients

    6 matzos
    2 large eggs
    2 tbsp coconut creamer
    1 tsp cinnamon
    1 tsp vanilla extract

    (If making for Passover, make sure each ingredient has no chametz in it!)

Directions

Break matzos in half and put in a large bowl filled with hot water. Let soak for 3-5 minutes (but not longer - you want the crackers to still have a bit of solid crunchy-ness in the center).

In the meantime, whisk remaining ingredients together in another bowl.

After the matzos are done soaking, drain all of the water, squeezing the matzos to get as much water out of them as possible. The dryer the better! You want the matzos to soak up the egg!

Break matzos into small pieces and add to egg mixture. Stir (hands are best for this!) until completely combined. Let sit for another minute or so while you warm up your pan.

Add mixture to a pan that is over medium-high heat and greased lightly with oil or non-stick spray. Cook like you would scrambled eggs.

When completely cooked through, you're done! Serve with maple syrup or honey.
