Ingredients

    Dry Ingredients:
    1 3/4 c. whole wheat flour
    1 tbs baking powder
    2 tbs sugar

    Wet Ingredients:
    1 3/4 c. almond milk (unsweetened)
    1/2 c. oil (I used olive oil)
    2 egg yolks (set whites aside)


Directions

First mix wet ingredients: milk, oil, and egg yolks. Set egg whites aside in separate bowl. Then mix the dry ingredients in large bowl, blend. Once blended, pour in the wet ingredients. Now take the egg whites set aside and whip until the whites are stiff. Once they are whipped fold the whites into the batter (be careful not to over mix, you want there to be "lumps" of whipped whites throughout the batter). Now scoop about 1 cup of batter onto a waffle iron and cook!
