Introduction

Ingredients

    4 - 3 to 4 oz Salmon fillets
    2 bags Baby Spinach
    1/2 cup pkg pine nuts
    1 container cherry tomatoes (8 oz?)
    2 oz feta cheese

Directions

Toast pine nuts in pan and set aside. Using same pan, saute salmon to desired doneness, set aside. Place spinach in pan over medium heat with white wine to wilt. Add back in pine nuts and toss in tomaoes. Heat through. Serve salmon on spinach bed. Toss (garnish) with feta.
