Introduction

Ingredients

    1 Cup leftover boiled potatoes
    1/2 cup Bisquick
    1 large egg
    1/2 tsp Garlic Pepper
    1/2 tsp Sea salt
    3/4 cup Lowfat Buttermilk
    2 Tbsp Extra Virgin Olive Oil

Tips

This is an old southern recipe used by my family to use up leftover potatoes. Leftover mashed potatoes work also. Same process for both. By using olive oil you reduce the fat and make it heart healthy. One cake goes a long way, so use them sparingly. If you need something to tell your taste buds you're eating forbidden foods, this is it. Better than candy.


Directions

Mix all ingredients except Olive Oil in a medium size mixing bowl to make a thick batter. Heat a skillet with the olive oil in it over medium heat until hot. Spoon batter into hot skillet and reduce heat to medium low; let cook on one side, then turn with spatula and let cook on other side. Remove from heat and serve hot.

Serving Size: Makes 6 3 inch cakes
