Introduction

Ingredients

    3/4 c dried apricots or peaches
    3/4 c dried pitted prunes
    2 tbsp golden raisins
    2 tbsp dark raisins
    1 tbsp currants
    1 cinnamon stick
    1 tsp grated orange peel
    3 tbsp quick cooking tapioca
    4 cups of apple juice, cranberry juice, or water
    1/4 c sugar
    1 tart red apple, cubed

Directions

Cut the fruit into 1" chunks and place in a deep saucepan. Add the raisins, currants, cinnamon stick, orange peel, and tapioca. Add the juice or water and let stand for 1 hour. Stir in the sugar. Place over moderate heat and heat to boiling, then reduce heat and simmer, stirring occasionally, for 30min, or until the fruit is tender and the soup has thickened. Add the apple, cook 10 more minutes until apple is tender. Remove from heat and cool. Pour into a serving bowl and chill. Serve cold with heavy cream.
