Introduction

Not low-fat (I don't consider it low fat, anyway), but very tasty and impressive for company. I decreased sugar by 1/2 cup already, and increased pumpkin pie spice to 2 Tbsp (I love me some spices!). Next time, I'm going to try fresh or frozen cranberries - I can't find dried cranberries that AREN'T sweetened. Ingredients

    flour
    pumpkin pie spice
    baking powder
    salt
    eggs
    sugar
    apple sauce, unsweetened
    vegetable oil
    fresh or dried cranberries

Directions

Combine flour, spice, baking powder, and salt in a bowl; stir to blend the dry ingredients well. Combine eggs, sugar, apple sauce, and oil in a mixing bowl, beating until smooth. Stir in flour mixture, then stir in cranberries. Spoon into greased 9x5x2" loaf pan. Bake at 325 degrees for 70 min (1 hr 10 min), or until a wooden pick inserted in centre comes out clean.

Serving Size: makes 2 normal sized loaves instead of 1 huge one, 24 slices
