Ingredients

2 c wheat flour (all-purpose is OK, whole-wheat pastry flour is great)
1 c buckwheat flour
1 teaspoon salt
1/2 teaspoon dried yeast
1 cup milk
2 small eggs
Enough oil to grease the pan
Tips
I eat these with yogurt and kippered herring, which is not very close to the traditional sour cream and caviar.
Directions
Warm the milk; whisk in yeast and eggs.
Mix together the flour and salt; pour in the liquids. Whisk until it's smooth. Add enough water to make it just thin enough to pour.
Cover the mixing bowl with a cloth and put somewhere room-temperature warm for about an hour.
Cook on a hot pan or griddle, either 4 big pancakes or 12 little ones. Flip when the top of the first up-side looks dry.
Serving Size: Makes 4 servings, big enough for a hearty sandwich each.
