Introduction

This is a great light dish. The goat cheese gives it a lovely flavor. I also use leftovers in scrambled eggs for breakfast. This is a great light dish. The goat cheese gives it a lovely flavor. I also use leftovers in scrambled eggs for breakfast.
Number of Servings: 4

Ingredients

    1 lb Sweet Italian Turkey Sausage
    1 Zucchini
    1 Summer Squash
    1 c. snap green beans
    1 small yellow onion
    1 red, yellow or green bell pepper
    1c. soft crumbled goat cheese

Directions

Slice the turkey sausage and cook in medium fry pan until cooked through. Cut up all the veggies how you would like.
Remove the sausage and add the vegetables. Cook until all the veggies are tender.
Add the sausage back to the pan and stir through.
Serve and sprinkle goat cheese as desired.
