Ingredients

1 TB olive oil
5 garlic cloves, minced
2 carrots, shredded
1 onion, diced finely
1 lb. lean ground beef
2 jars spaghetti sauce of choice
3/4 cup grated parmesan cheese
2 eggs
1 tsp. pepper
1 tsp. italian seasoning
12 oz 4% large curd cottage cheese
11 whole wheat lasagna noodles
4 cups part-skim mozzarella cheese
Directions
Add oil to large skillet. Brown garlic and onion. Add meat and brown. Stir in carrots and 1 can spaghetti sauce. Remove from heat and set aside.
Mix cottage cheese, eggs, parmesan and seasonings together.
In a 13x9 pan, pour 1/2 cup of remaining sauce in bottom. Lay 3 full length noodles on top of the sauce. Break 1/3 off another noodle and lay at the end of the pan. Spread half of the cheese mixture on top of noodles. Spread half of the meat/sauce mixture on top of that. Spread 1 cup of mozzarella cheese on top of that. Repeat this layer again. Then put one more layer of noodles on top and pour the remaining spaghetti sauce on top.
Cover the lasagna with foil and bake at 350 for 45 minutes. Remove the foil and sprinkle the remaining mozzarella cheese on top. Return to oven uncovered for 15 minutes. Remove from oven and let sit at least 10 minutes before cutting into 12 pieces.
