Ingredients

    1.5 cups instant brown rice
    1 can (14.75 oz) chicken broth
    1 bag frozen Southwestern style corn
    1 can (15 oz) black beans, rinsed and drained
    Chicken breast from a rotisserie chicken, shredded (approx. 2 cups)
    1 cup shredded colby/monterey jack cheese
    1 cup salsa
    Sour cream, optional
    Nacho cheese Doritos, optional

Tips

Add sour cream and/or crushed Nacho Cheese Doritos or tortilla chips as desired.

Directions

*Preheat oven to 400 degrees Fahrenheit.
*Prepare the corn per instructions on the bag (if using canned, skip this step)
*Add the rice, chicken broth, beans, chicken, and prepared corn to a 13x9 baking dish.
*Top with salsa.
*Bake uncovered on middle rack for 20 minutes.
*Remove and add shredded cheese; return to oven 5-10 minutes, or until rice is tender.
*Let sit 5 minutes before serving.
