Ingredients

    4-6 whole kale leaves
    6 large organic, cage-free eggs
    1/2 cup whole fresh milk
    1 small green pepper, chopped
    1 small red onion, chopped
    1/2 tsp. Redmond Real Salt

Tips

You can substitute non-fat milk. Egg Beaters would probably also work here.


Directions

Briefly submerge whole kale leaves into boiling water. Lay on the bottom of a non-stick pie pan. Beat the eggs, milk, chopped peppers, onion, and salt together; pour over the kale. Bake at 375 F. for about 30 minutes, or until done in the center.
