Ingredients

    Olive Oil, 1 tbsp
    Onions, raw, 1 cup, chopped
    Sweet peppers (bell), 1 cup, chopped
    Red Ripe Tomatoes, 1 cup cherry tomatoes
    Egg white, 1 serving

Tips

If bottom of omlette is cooking too fast, remove from heat and stick the frying pan under the oven grill for a minute or so.


Directions

Heat olive oil in non-stick frying pan. Add chopped onions and cook until soft. Add chopped peppers and tomatoes. Season with salt and papper. Cook until a veg are softened. Pour over egg whites. Cook until omlette is solid.
