Ingredients

    1 large onion chopped
    1 small jalapeno chopped
    1 red pepper chopped
    3 cloves garlic smashed
    1 pound seitan, 1/4inch cubes
    2T chili powder
    1t ground cinammon
    1/2t cumin
    28oz diced tomatoes (unsalted - whole foods)
    3T unsweetened cocoa powder
    3T blackstrap molasses
    2 - 14oz cans unsalted black beans
    2.5c unsalted veggie broth

Tips

unsalted tomatoes, beans, broth


Directions

- cook onions and peppers for 2 min
- Add garlic and seitan and cook 8 min
- Add spices, another minute
- Add everything else
- bring to slow boil, cover, cook 30min
- sit unheated for 20min

    I'm gluten free so I substitute Butler soy curls for the seitan, but this is my all time favorite chili recipe! - 2/9/14
