Ingredients
-
* 1/2 clove garlic, finely chopped
* 1 tablespoons fresh lemon juice
* 1/4 teaspoon sugar
* 1/2 tablespoon plus 1 1/2 teaspoons olive oil
* 2 6-ounce boneless, skinless chicken breasts
* kosher salt and black pepper
* 1/2 pound green beans
* 2 plum tomatoes, halved lengthwise
* 2 zucchini, chopped
* 1 onion, chopped
Tips
Would be great with cilantro and lime juice, as well!
Directions
1. Heat grill to medium-high. In a small bowl, combine the garlic, lemon juice, sugar, and half a tablespoon oil to make a vinaigrette. Set aside.
2. Rub the chicken with half a teaspoon oil and season with 1/4 teaspoon salt and 1/4 teaspoon pepper. Grill until cooked through, 5 to 6 minutes per side.
3. Meanwhile, in a large bowl, toss the green beans, tomatoes, onion, and zucchini with the remaining teaspoon oil and ¼ teaspoon each salt and pepper.
4. Grill the vegetables, turning the beans, onions, and zucchini often and the tomatoes once, until tender and charred, 3 to 5 minutes.
5. Serve the chicken and vegetables with the vinaigrette.
