Ingredients

    3 boneless skinless chicken breasts steamed or boiled then cooled and chopped

    2 stocks of celery chopped to desired size

    1/2 red onion finely chopped

    5 TBSP light mayo

    1-2 tsp dijon mustard

    salt and pepper to taste

Directions

Combine all ingredients in a bowl, to taste. Serve on a lettuce leaf or on good whole wheat bread.
