Introduction

Great to make when you have leftover rice to use up. Great to make when you have leftover rice to use up.

Ingredients

    2 C cooked brown rice
    15 oz can black beans, rinsed and drained
    1 C frozen corn, thawed
    1/2 C light sour cream
    4 oz can diced green chilies
    1-2 T canned diced jalapeno (optional)
    1 oz shredded cheddar cheese
    1 tsp cumin
    1/4 tsp salt
    1 avocado, diced

Directions

Preheat oven to 400*. coat a baking pan with non-stick spray. Mix together all ingredients except avocado. Spread into baking pan and cook for 30-35 minutes, or until heated through. Top with diced avocado.
