Ingredients

8 large eggs
3/4 c. milk (I used 2%)
1 c. 2% shredded cheddar cheese
1 c. fresh chopped spinach
1/2 c. chopped green pepper
1/2 c. chopped red onion (can use any kind)
1/2 c. medium tomatoe, chopped
3 T. real bacon bits
1/2 tsp. black pepper (or white, red, etc.)
Tips
Can use cupcake pan instead of casserole dish but watch cooking time, may vary.
Reheat for a quick easy breakfast fix.
Use any veggies you prefer, but recipe is calculated for the veggies listed.
Directions
Preheat oven to 350
Spray casserole dish with cooking spray
Chop veggies and layer in dish
Add bacon bits and cheese
Whip eggs and milk and pour over veggies
Bake for 30 min. or until set
