Introduction

A gluten free, vegan, sour-dough-like, flat bread that is VERY LOW calorie! A gluten free, vegan, sour-dough-like, flat bread that is VERY LOW calorie!

Ingredients

    White Rice, uncooked or raw, short grain, 1.5 cup
    Urad Dal, raw or uncooked, split white lentils, 0.75 cup
    Water, tap, 3 cup
    Pinch of salt to taste
    Spray oil for griddle

Tips

Cooler climates will need to allow it to "rise" longer. Warmer climates can get by with a shorter "rising" time.


Directions

sort and soak the rice and dal seperately in 3 cups water each for 4-6 hours. Grind in food processor first the dal, adding 1.5 cups warm water slowly, until it is smooth and frothy, scrape into large glass bowl.
Grind rice slowly adding 1.5 cup warm water until it is texture free. Add to dal puree. Cover loosely, place in warm place (75-80 degrees) for 18 - 24 hours. Will smell warm and like sour dough at end of this period. At end of "rising", mix in a pinch of salt and thin to runny pancake batter consistency as needed. Heat griddle to 375-400 degrees. Ladel about 1/4 cup to 1/3 cup batter onto hot, very lightly oiled griddle and with back of ladle move batter from center of circle to edges moving smoothly and quickly. When the first side is golden brown and edges begin to lift, flip to second side. Repeat until all batter is used - about 27 6-inch dosas. Eat with anything you can think of putting in them or warm right off the griddle!!
