Introduction

These are amazing cookies I made adapting the measurements to our cup system. I used Argentinian dulce de leche and semi-sweet chocolate for covering. Ingredients

    Ingredients:

    Butter, unsalted, 1 stick and 1 tablespoon melted at room temperature
    Baking Soda, 1 tsp(remove)
    Semisweet chocolate finaly grated, 3 oz (approx 60 pcs)
    Powdered Sugar, 0.5 cup and 1/2 tablespoon, unsifted
    Wheat flour, white, all-purpose, unenriched, 1.5 cups and 1 oz
    Egg Yolks, 3 large
    Vanilla Extract, 0.5 tsp

    For filling:
    San Ignacio - Dulce de Leche, 1.33 cup

    For coating and finishing the sandwiches:
    Semisweet chocolate, 1 cup chips melted

Directions

Add all of the dry ingredients then add the 3 yolks and melted butter. Form a dough, put flower on a surface and using a rolling pin strech to 1/4 inch. Using a cookie cutter make 24 rounds. Bake 20 minutes at 325. The cookies will not be change color but they are done when firm and crispy.

Let the rounds cool, then spread the Dulce de Leche and cover with melted chocolate.

Serving Size: Makes 12 alfajores (24 cookies to make 12 sandwiches)
