Ingredients

    1 lb boneless pork, cut into 1" pieces
    2 Yukon potatoes, cut into 1" pieces
    1 Sweet potato, cut into 1" pieces
    1 C. chopped carrots
    1 can sweet corn
    1 Jalapino, chopped
    1 C. chicken broth
    2 Tbps. Flour
    1 Tbps. Canola oil
    2 cloves garlic, minced
    1 Tbps. Fresh Thyme
    1 Tbps. Fresh Parsley
    Pepper, to taste

Directions

Toss pork with 1 Tbps. of flour and cook in oil over medium heat, just until all sides are browned. Mix with remaining ingredients, except left over flour and parsley, in croc pot. Cook on low for 5 to 6 hours. Add flour and cook on high for 10 minutes or until thickened. Add parsley and serve.
