Introduction

Ingredients

    2Tbs olive oil
    1 14oz(ish) can artichoke hearts in water
    1 small/medium onion
    1 egg
    splashes lemon juice
    few shakes garlic powder

Directions

Chop onion into strips. Drain artichokes. Heat olive oil in a medium/large sauté pan over medium-high heat. When oil is hot add onions and cook until soft and translucent. Add artichokes. You can break them up a little if you want smaller pieces. Crack the egg into the pan, break the yolk and stir to distribute. Add a couple splashes of lemon juice and a few shakes of garlic powder. When the egg is cooked thoroughly it's done! Can add boiled potatoes for a variation. Serve over rice/couscous/starches or it's great by itself!
