Ingredients

    Salad:
    2.25 cups Lima beans
    1 cup kidney beans
    .5 cups sweet corn
    1/2 a medium red onion, sliced thin
    1 chopped scallion
    1 cup cherry tomatoes (halved),
    1 cup chopped fresh cilantro, not packed

    Seasoning:
    1 TBSP Olive oil
    1 TBSP cidar vinegar
    1 TBSP tahini
    1 heaped tsp zaatar spice mix (or other mixed dried herbs)
    sea salt and pepper to taste.

Tips

Letting this salad sit in the fridge for a few hours really lets the flavours develop, but it is also yum straight away.


Directions

If you've bought canned bean and corn, well, you've nothing to do here. If you've bought dried you will have to cook as usual.

Mix prepared ingredients together in large bowl. Toss lightly. Serve immediately or let chill in the fridge.
