Introduction

Number of Servings: 4

Ingredients

    1 lg can of diced tomatoes (796mL)
    .66 c chickpeas (drained and rinsed)
    1 c frozen mixed vegetables (I used Great Value)
    1 c uncooked Catelli Smart Macaroni
    .25 tsp hot sauce
    1 tsp. oregano
    1tsp garlic powder
    1 tsp onion powder
    1 med. white mushroom cut in pieces

Tips

You can use 1 cup of white rice in place of the macaroni if desired.
Spices can be switched up according to taste.


Directions

Cut up mushroom.
Mix all ingredients in a 10 inch skillet with cover (I use a pizza pan)
Bring mixture to a boil. Med.-high heat.
Reduce heat to low, cover.
Let simmer for 25 min.
Top with grated parmesan cheese or breadcrumbs (not included in nutritional information)
