Ingredients

1 1/2 cups chopped Strawberries
1 3/4 cups Whole Wheat Flour
3/4 cup packed brown sugar
1 Tbsp regular sugar
1 1/2 Tbsp baking powder
1/2 cup regular uncooked oats
2 eggs
1/2 tsp salt
1/2 cup skim milk
1 1/2 tsp vanilla
6 Tbsp of melted butter
Tips
I wrote the recipe for the regular milk but subsituted soy milk for regular milk so I needed a few extra tablespoons of milk. If using soy milk or any other type of milk start with 1/2 cup and add a few tablespoons more if the mix is too dry.
Directions
1) Preheat oven to 350 degrees
2) Cut strawberries and stir in white sugar
3) Combine dry ingredients in a large bowl and mix
4) Combine wet ingredients in a small bowl, mix and then stir into dry ingredients
5) Add strawberries
6) Dish into muffin tin. Leave about 1/2 inch space from the top of a standard muffin cup to get about 18 muffins.
7) Bake for 15-20 minutes at 350 degrees
Serving Size: Makes 18 medium sized muffins
