Ingredients

    2 large red, ripe, concansee'd tomatoes*
    2 TBS. fresh basil, chiffonade**
    4 tsp. fresh minced garlic
    1/2 C. fresh buffalo mozzarella (balls), diced
    1 TBS. olive oil
    1/2 tsp. kosher salt

Tips

Served best when toasted over whole grain crustini's.
Bake until mozzarella melts.


Directions

*CONCASSEE TOMATOES: boil a large pot of water. Cut a small "x" on the bottom center of tomatoes. Dip tomatoes into boiling water for 2 or 3 minutes until skin begins to crack or curl off of the flesh of the tomato. Remove skin from tomatoes, once they have cooled enough to handle. Cut tomato open and remove all seeds. Dice remaining outer shell of tomato flesh.

**BASIL CHIFFONADE: pluck large leaves, alike and stack, Roll one side of leaves to the other, tightly. slice thinly until reaching stems. Appearance should resemble easter grass once unraveled.

Dice mozzarella and mince garlic. Add all ingredients together.

Serving Size: makes 8- 1/4 cup servings
