Ingredients

    1 large ripe banana
    1 c. pureed pumpkin
    1/2 c. sugar OR12 tsp. splenda
    1 tsp. vanilla
    1 lb. medium tofu
    1c. whole wheat flour
    1 c. all purpose flour
    1/2 tsp. baking powder
    1/2 tsp. baking soda
    1/4 tsp. salt
    1/2 tsp nutmeg
    1/2 tsp. cinnamon
    1/2 tsp. ginger
    1/2 c. walnuts (optional)

Directions

Blend first 5 ingredients in a blender until smooth.

Whisk the rest of the ingredients together in a bowl. Add wet ingredients and still until just moistened. Pour into a 9x9 pan or loaf pan. Smooth to the edges. Bake at 350 for 40 - 45 mintues or until toothpick inserted comes out clean. One loaf yields 10 servings.

I like to serve mine with a dish of cream cheese frosting on the side.
