Ingredients

    1 1/4 cups warm water
    2 tablespoons brown sugar
    1/4 teaspoon ground ginger
    1 1/2 teaspoons salt
    2 cups whole wheat flour
    1 cup unbleached all purpose flour
    2 teaspoons instant yeast (or equivalent)
    1 teaspoon diastatic malt powder (optional, improves texture and shelf life)
    1 tablespoon vital wheat gluten (optional, helps rise and adds a little chewiness)
    Dried cranberries, nuts, cinnamon flav-r-bursts (from King Arthur Flour) optional

Directions

Mix all ingredients together in a large bowl until they are combined and form a ball. Insert dough hook or turn out onto a floured bowl. Knead by machine for about 8 minutes, by hand for about 10-12, until the dough is very smooth and pliable. Add flour or liquid as needed.

Let rise until double. Turn out onto a board and GENTLY deflate. Shape into a loaf or your desired form.

Let rise again for about 45 minutes or until nearly double.

Bake at 350 for 25-35 minutes or until internal temperature reaches 190 degrees.
