Ingredients

    3/4 cup whole wheat flour
    1/2 cup white flour
    2 tablespoons sugar
    2 1/2 teaspoons baking powder
    1/2 teaspoon salt
    1 1/4 cup skim milk
    1 egg, beaten
    1/2 cup Smart Balance Omega Peanut Butter, creamy
    1 tablespoon Smart Balance Omega-3 oil


Directions

In a mixing bowl, combine flours, sugar, baking powder, and salt. In another bowl, whisk egg with the milk and peanut butter until smooth. Pour peanut butter mixture into the flour mixture and stir just until moistened. Do not over mix, batter will still be slightly lumpy. Heat a griddle or large skillet over medium heat until hot. Coat lightly with Smart Balance Omega oil. Pour 1/4 cup batter onto the heated gtriddle for each pancake, turning when edges become slightly dry and bubbles appear on the surface of the pancake. Serve with fresh sliced fruit, light preserves or syrrup.

Yield: 12 pancakes
