Ingredients

    3 cups of lettuce roughly chopped
    1 small - medium tomato, cut into wedges
    1/3 of a green or Lebanese cucumber, sliced
    1 medium to large mushroom, chopped
    1 medium Spanish onion, diced or chopped
    60g (1/4 of a can) of tinned red kidney beans
    60g (1/4 of a can) of tinned lentils
    78g (1/4 of a can) of tinned corn kernels
    drizzle of French salad dressing to taste

Tips

The addition of corn, lentils and beans adds iron, making it nutritionally complementary to poultry meals. Fresh ingredients can be used instead of tinned.


Directions

Combine in a bowl and mix thoroughly - best served immediately.
