Introduction

Ingredients

    Asian Slaw-
    1/4 C rice vinegar
    1/4 C light mayonnaise
    1 T soy sauce
    1 T sugar
    1 clove garlic, minced
    2 tsp grated ginger
    1/4 tsp wasabi paste
    10 C shredded cabbage

    Salmon cakes-
    3 (6oz) cans wild Alaskan salmon (I use Kirkland brand)
    1/4 C breadcrumbs
    1 egg, beaten
    1 tsp cumin
    1/4 C light mayonnaise
    1-2 tsp wasabi paste
    1 T olive oil

Directions

For slaw, mix all ingredients except cabbage. Pour over cabbage and mix well. Refrigerate until ready to serve.

Mix the salmon, breadcrumbs, egg, cumin, mayo & wasabi. Form into 12 patties. Heat oil over medium heat. Cook patties 3-4 minutes per side or until browned. Serve over slaw.
