Ingredients

    1/4 cup olive oil
    2 onions, diced
    1 tablespoon ground coriander
    1 teaspoon ground cloves
    1 tablespoon sherry
    1 container firm tofu, drained and cubed
    1 pound dried black beans, soaked in water overnight
    1 to 1.5 cups chicken stock
    1 bay leaf
    6 cloves garlic, peeled and chopped

Directions

Combine all ingredients but the tofu in a slow cooker. Cook on high for 5.5 hours. Add the tofu carefully and continue to cook for 30 minutes more.
