Introduction

Reasonably healthy but very tasty breakfast for one. Reasonably healthy but very tasty breakfast for one.

Ingredients

    1 tbsp butter
    1 c. fresh or frozen broccoli, blanched
    2 large eggs and 1 large egg white, seasoned and scrambled
    1 garlic clove, minced
    salt, pepper, other spices to taste (in egg mixture)

Tips

- It's best to think of the eggs as a tasty binder for the broccoli and garlic.
- Some may prefer to use pan spray rather than butter, but I hate that stuff.
- Feel free to substitute cayenne for black pepper. I do and it's awesome.


Directions

Serving Size: 1

1. Saute blanched broccoli with butter in medium size, non-stick pan. It should be somewhat tender, but still bright green and slightly crisp.
2. Add minced garlic, toss, and saute very briefly.
3. Add seasoned and scrambled eggs.
4. Cook 'til cooked! (Don't brown the eggs!)
5. Om nom nom nom!
