Ingredients

1 1/2 cups cooked long grain brown rice
1 lb pork loin, trimmed of fat and cut into 1/2" cubes
2 T canola oil
2 tsp sesame oil
1 medium sweet onion, sliced thinly lengthwise
3 cloves garlic, minced
1 1/2 cups frozen peas, thawed
1 large carrot, grated
1 1/2 cups bean sprouts
1 tsp ground ginger (I use fresh if I have it)
1 bunch of green onions, sliced thin (about 1 cup)
1 - 2 T LITE soy sauce to taste
Directions
Cook the rice according to package directions.
About halfway through cooking time of rice, prepare your vegetables. Slice your onions, green onions, grate carrot, thaw peas, etc.
Heat canola oil in a large skillet or wok to medium high heat, add pork and stir fry until no longer pink (about 3 - 5 minutes) remove from pan. Add sesame oil, onion and garlic to pan. Cook and stir until crisp tender (about 3 - 5 minutes). Add peas, carrots and bean sprouts to pan and cook and stir till heated through. Add the cooked rice stirring till combined, season with the ginger and sprinkle the green onions on top. Stir all together and heat until warmed through. Season with LITE soy sauce to taste.
Serving Size: Makes about 6 very generous servings
