Number of Servings: 4

Ingredients

    1/4 cup flour
    2 cups chicken broth
    1/4 tsp pepper
    1-2 bay leaves (if desired)
    2/3 cup finely chopped celery
    1/4 cup finely chopped onion
    4-5 cups sliced fresh mushrooms
    2/3 cup skim milk

Directions

In a small saucepan whisk together flour and chicken broth. Add pepper and bay leaves if using. Simmer, uncovered until thickened, stirring occasionally. Meanwhile spray another saucepan with nonstick spray. Saute celery and onion until tender. Add mushrooms and simmer for 2-3 more minutes. Add broth mixture; bring to a boil. Reduce heat, and simmer uncovered for 15 minutes, stirring occasionally. Add milk; heat through. Discard bay leaves if used.
