Introduction

Ingredients

300g spinach/silverbeet
2 tblspn butter
1 large onion finely diced
1 cup ricotta
1/2 grated swiss cheese (or parmesan)
3/4 cup mushrooms - finely diced
1/2 tspn ground nutmeg
1/2 tsp salt
3 cloves of garlic, crushed and chopped
ground black pepper
1 egg, lightly beaten
8 sheets filo pastry
Tips
I sometimes add a splash of white wine when cooking off the veges...These can also be made into individual portions in a muffin tin - just line it with filo - great for lunches with a salad. This is VERY tasty!!!
Directions
Preheat oven to 180deg C.
Cook onion in butter until cooked but not brown. Add spinach, mushrooms and garlic and cook until pan is dry - taking out sall the moisture from the spinach.
Mix ricotta, feta, cheese, nutmeg into the spinach. Add salt and pepper to taste then add the egg.
Stack up 8 sheets of filo (with melted butter or spray between each sheet) and pour spinach mixture into a log shape in the middle longways. Roll up the filo around it loosely and place on baking tray. Bake until crisp and golden.
Serving Size: Roll can be sliced into 6 portions
