Ingredients

    3 bone-in pork chops, about 4 ounces each
    1 can red beans, rinsed
    3 cups brown rice
    2 tsp Creole seasoning (or to taste)
    Juice and zest from one orange
    1 additional orange for garnish

Directions

Salt and pepper pork chops to taste. Brown in a large skillet, then remove from skillet. Add juice from one orange to a measuring cup, then add water to make enough water to cook rice (enough to make 3 cups of rice.) Add rice, beans, water/juice mix, and zest to pan. Nestle pork chops into the rice mixture.

Bring to a boil, then cover and cook on low until rice and pork chops are cooked through, about forty minutes.

Serve with orange garnish.

Serving Size: Makes 3 servings of 1 pork chop and about 1.5 cups riceb mixture
