1 lb. ground buffalo meat
1 egg, beaten
1/4 1% milk
1/2 c. bread crumbs
1/4 c. onions (green or Spanish)
2 tsp. Worcestershire sauce
1/2 tsp. black pepper
Tips
Buffalo meat can be exchanged for lean ground beef but the calorie, fat and cholesterol content goes up significantly. Buffalo meat is becoming more widely available.
With the Worcestershire sauce, you don't need added salt. Adding even 1 tsp of salt to the recipe brings the sodium content up to 880 mg per serving. There is plenty of salt in the Worcestershire sauce.
For those who follow a gluten free regimen, you can use rice bread crumbs. They work equally well.
For meatballs, you can cook them in your favorite sauce. I usually cook mine in honey garlic sauce and I never have leftovers when I bring them to a party. However, cooking them in a sauce will add to the calorie content. (But it's worth it, in my opinion)
I generally use green onions just because they add some colour to the meat, even when it's cooked.
**Note that the nutritional information does NOT include the hamburg bun.
Directions
Cook meatballs for approximately 25 minutes at 375 degrees or until juice no longer runs pink. Cook thoroughly on the BBQ for approximately 10 minutes, or until juice is no longer pink.
**This recipe can be frozen.
