Introduction

I made these in large muffin cups, but if you use regular size, you'll need more wonton wrappers and the calories should be less per cup. I made these in large muffin cups, but if you use regular size, you'll need more wonton wrappers and the calories should be less per cup.

Ingredients

    1# ground chicken
    1 pkg. taco seasoning
    .5 c. refried beans
    1 c. salsa
    .5 light sour cream
    .75 c. shredded mexican cheese mix
    6 jumbo black olives, chopped
    guacomole or 1 avocado mashed with some salsa


Directions

brown ground chicken with taco seasoning. Spray muffin tins and put 2 wonton wrappers in each cup, juxtaposed to cover. Add 2 spoonsful meat mixture. Top with 1 spoonful refried beans. Top with another wonton wrapper. Add another spoon of meat mixture. Top with cheese, divided among cups. BAKE at 350 degrees for 15-18 min. Serve with sour cream, guacomole, and black olives on top.

Serving Size: 6 large cups or possibly 8 regular
