Ingredients

    Whole Milk / Vitamin D, 1 cup
    Vanilla bean, 1/4 bean
    Heavy Whipping Cream, 1 cup
    Granulated Sugar, 4 oz
    Egg Yolk, 6 large

Tips

Cooling over ice will bring down the temperature quickly and reduce the chance of over cooking.

Add other spices to the milk and cream for a different flavor, or chocolate pieces before cooling to make a chocolate creme anglaise.


Directions

Scald the milk, cream, vanilla and half the sugar. Stir together the yolks and remaining sugar, and immediately add in half the milk mixture, and ounce or two at a time. Return to the pot with the rest of the milk mixture and heat until it coats the back of a spoon. Strain and cool over ice before refrigerating.
