Introduction

Makes a delicious and creamy pumpkin spinach soup for two. Low-carb friendly, at 7 net carbs per serving. Makes a delicious and creamy pumpkin spinach soup for two. Low-carb friendly, at 7 net carbs per serving.

Ingredients

    1/4 cup chopped onion
    3 cloves garlic, chopped
    2 tsp olive oil
    1 chicken bouillon cube
    1 cup water
    1/2 cup canned pumpkin
    1/2 cup fresh spinach, shredded
    2 Tbsp heavy cream
    Salt and Pepper to taste
    2 tsps chopped pecans, for garnish

Directions

Sweat chopped onions and garlic in olive oil. Add bouillon cube and water. Bring to a boil and stir until bouillon cube is dissolved. Lower heat and stir in pumpkin until smooth consistency. Add shredded spinach and continue cooking on low heat for 2 minutes, stirring frequently. Turn off heat, and stir in heavy cream. Salt and pepper to taste. Divide soup into two bowls. Garnish each serving with 1 tsp. chopped pecans.



Serving Size: makes 2 servings, approx 1/2 cup each
