Ingredients

    1 cup whole wheat flour
    1/2 cup whole grain oatmeal
    1/2 teaspoon baking soda
    1 Tablespoon baking powder
    1 1/2 teaspoons ground cinnamon
    2 Tablespoons Splenda Brown Sugar Blend (see note)
    1/2 cup Egg Beaters
    1/3 cup unsweetened applesauce
    2 medium (or 1 cup mashed) bananas
    1/2 cup chopped walnuts

Tips

This is a true muffin, not those sweet cupcake kind you get from store mixes. If you don't have Splenda Brown Sugar Blend, using 1/4 cup regular brown sugar works great but will add a few calories.


Directions

Preheat oven to 400*F and move oven rack to center. Spray (or paper line) a 12 cup muffin pan. In a large bowl, stir together all dry ingredients (except walnuts). In a small bowl mash bananas and mix together with other moist ingredients. Pour small bowl contents into large bowl contents and mix lightly. Batter may be lumpy. Stir in walnuts. Fill muffin cups about 2/3 full, dividing batter evenly. Bake 12 - 18 minutes (my oven took 16) until toothpick in center comes out clean. Remove from pan and cool on wire racks.
