Ingredients

    3 Egg Whites
    1 slice of center cut bacon, cooked and sliced
    1 Laughing Cow Light Queso Fresco & Chipotle Cheese Wedge, cut into small pieces
    1 slice of healthy life white bread
    A dash of Pepper

Directions

1. Preheat oven to 375 degrees.

2. Using a rolling pin, flatten the slice of bread. Place in a well sprayed muffin pan so it forms a cup.

2. In a small bowl, combine the egg whites, bacon and pepper. Stir well. Gently add the cheese and fold in.

3. Pour mixture into the bread cups and bake for 20 – 25 minutes.

4. Once cooked, remove from oven and allow to cool in pan 3 - 4 minutes before removing from pan to a plate.

Serving Size: Makes 1 muffin
