Ingredients

    1/3 C Uncooked Pearled Barley
    4 C of Chicken Stock
    3 Garlic Cloves, Minced
    2 T Dried Parsley
    2 C of Fresh Spinach, torn into smaller pieces
    8 t of grated parmesan
    2 T Lemon juice

Directions

Combine chicken stock, parsley, garlic and spinach and cook over medium heat until spinach and garlic are tender. Cook barley as directed. Divide barley between two bowls and then pour half of the broth over each one. Top each bowl with 1T of lemon juice and 4 t of grated parmesan cheese. Salt to taste.

Serving Size: makes 2 2-cup servings
