Ingredients

    2 chicken breasts (or more if you like more meat - 2 makes it very light on the meat)
    6 plum tomatoes
    about a cup of chopped fresh cilantro
    juice from 4 limes
    large onion (I use vidalia sweet onion)
    4 jalapenos
    8 cups chicken broth
    4 cloves garlic
    5 stalks celery
    Olive oil
    Thyme (dried)
    Pepper

Directions

Saute all onion, celery, & garlic in olive oil, add tomatoes (cubed) near the end and then add broth. Brown chicken on both sides (sprinkle with thyme and black pepper) and add to vegetables and broth mixture. Cook for 20 minutes (approx). Take chicken out and shred. Cook a little longer, maybe 10 minutes. Add chicken back in along with juice from limes and cilantro. Cook 5 minutes. Serve.
