Ingredients

3 medium yellow potatoes
water
1/4 cup onion, chopped
2 tbsp red bell pepper, chopped
3/4 cup grated cheddar cheese
1/2 cup ham, cubed
1 tbsp maple syrup (pancake syrup)
2 eggs
1 tbsp skim milk
salt and pepper to taste
2 dashes hot sauce
Tips
This recipe freezes very well, just pop in the microwave and you are ready to go!
Directions
1. Boil the yellow potatoes until they are almost cooked through. Chop into 1 inch cubes.
2. Pre-heat frying pan and add the oil. Fry the potatoes until browned and cooked through.
3. Add chopped onion & bell peppers: cook until soft and onions are opaque. Put potato, Onion & Pepper mix in a medium casserole dish.
4. In the same pan add the ham and the maple syrup. heat on low until the maple syrup is absorbed into the ham. Layer on top of the potato mixture in the casserole dish.
5. In a small bowl whisk together the eggs, skim milk, hot sauce and salt and pepper. Add eggs to the hot pan: stir and cook eggs in pan until cooked through. Add to casserole dish.
6. Sprinkle grated cheddar cheese on top of everything in the casserole dish. Bake in 350 degree oven for about 10 minutes or until cheese is bubbly and dish is heated through. Serve hot!
