Introduction

Ingredients

    1 bunch fresh asparagus, cut into 1in. pieces
    1 med red bell pepper, chopped into 1/2 in. pieces
    1 med yellow squash, chopped into 1/2 pieces
    3 tbsp fat free sour cream
    1 tbsp Newman's Own Low Fat Sesame Ginger dressing
    1 tbsp dried parslay
    *optional - red pepper flakes
    salt and pepper to taste

Tips

Steam your asparagus any way you feel comfortable. Just make sure to NOT OVERCOOK IT!! You want in still nice and crisp!


Directions

Steam asparagus in a steamer basket on the stove, or in the microwave, for about 7-10 minutes, just until it is bright green and crisp tender. Transfer to an ice water bath to blanch and stop the cooking. Place on a plate covered with a paper towel to drain. Set aside.

In a medium bowl, combine the sour cream, dressing, red pepper flakes, parsley, salt and pepper. Mix to combine.

Add the chopped red bell pepper, squash, and asparagus. Gently fold with a rubber spatula until all the veggies are coated and fully combined. Chill in the fridge or serve immediately.

Serving Size: makes 6 1/2c. servings
